June is one of my favourite times to be in the kitchen. The strawberries are ripe and fragrant, asparagus is still going strong, the grill is officially back in action, and the farmers' market is bursting. Everything feels lighter, brighter, and more alive, and it hasn't yet got so hot that you don't want to turn the oven on!
It's a month where we can let the produce do the talking, and this collection of seasonal vegan recipes to cook in June are the ones I make when I want something fresh, satisfying, and full of flavour in this late spring, early summer period.
