When you need a warm and cozy breakfast my Peanut Butter Oatmeal is here for you. It's quick, easy, and so creamy and delicious!
You could go bonkers with toppings (like strawberry jam for PBJ oatmeal vibes, chopped peanuts, vegan yogurt, chocolate chips, fruit compote, blueberries, vegan caramelized bananas, and melty vegan butter) but I really love it just plain and simple. A steaming bowl with a drizzle of peanut butter, some sliced banana, and a drizzle of maple syrup. Yum!

Ingredients
Here is what you need at a glance, along with some important ingredient notes & substitution ideas:

- Oats - You can use old-fashioned, rolled oats or quick oats. I haven't tried it but I think steel-cut oats should be ok too. You would just need to cook the oatmeal a little lower and longer.
- Peanut butter - Any other nut or seed butter such as tahini, sunflower seed butter, or almond butter can be used instead.
- Sweetener - Brown sugar or maple syrup adds lovely flavour to the oatmeal so are my preference here. You can use any other kind of sweetener such as cane sugar, agave, or stevia, or add no sweetener at all if you don't have a sweet tooth.
- Water - The peanut butter makes this oatmeal really creamy so I tend to use water when I make it then drizzle over a little milk when serving. You can use milk instead of water if you prefer.
- Cinnamon - Just a touch for more flavour. Vanilla works well too.
- Salt - I like to add some even if the peanut butter is salted. Just a pinch. If it's not salted add a slightly bigger pinch.

1 - Add everything to a saucepan.

2 - Heat gently, smushing up the peanut butter as you stir, until thick and creamy. The more you stir as it cooks, the creamier it will get.

Making Ahead
The recipe as written makes 2 generous portions but if you want to make a big batch for meal prep you can double, triple, or quadruple the recipe. Store it in the fridge for up to 5 days and reheat as needed adding a little milk or water to thin as needed.
You can also freeze it. A great way to do this is to use a muffin pan. You can grease the wells or use silicone muffin liners, then fill each one with oatmeal. Freeze until hard, then pop out. If you didn't use a silicone liner, use a dinner knife. Stick it down the side and lift the "muffin" up and out. Transfer to containers or freezer bags. Remove what you need from the freezer and warm very gently in a pan or the microwave, adding a little water or milk to thin as needed. I usually use 2 "muffins" per person.

Peanut Butter Oatmeal

- 1 cup rolled or old-fashioned oats
- 2 cups water
- 4 tablespoons peanut butter
- 2 tablespoons brown sugar or maple syrup
- ½ teaspoon ground cinnamon
- a big pinch fine sea salt
Toppings of choice such as:
- strawberry jam/jelly
- blueberries
- chocolate chips
- vegan caramelized bananas or fresh banana
INSTRUCTIONS
- Add everything to a small pan. Place over medium-low heat and stir, using your spoon to squish and break down the lumps of peanut butter. The heat will help it melt too.
- Cook for about 5 minutes until thick and creamy. Take off the heat just before it reaches the thickness you enjoy because it will continue to thicken a little once it comes off the heat.
- Serve in bowls with toppings of choice.
