With delish banana bread flavor it makes a really hearty breakfast that can be enjoyed hot or cold. It's a healthy breakfast that the whole family will love.
Ingredients
Here is what you need at a glance, along with some important ingredient notes:
- Oats - These should be old-fashioned/rolled oats, not steel-cut or quick oats.
- Bananas - This is a great recipe to use up your overripe spotty bananas. If your bananas aren't really ripe and spotty though you can still use them. I'd recommend adding another tablespoon of your chosen sweetener to compensate though.
- Milk of choice - Any dairy-free milk such as cashew milk, soy milk, oat milk, or almond milk is fine to use.
- Sweetener - Maple syrup, sugar, or agave. Maple syrup will give the best flavor.
- Cinnamon - My go-to but you could use pumpkin spice or apple pie spice.

1 - Baked oatmeal recipes don't get any easier than this! Mash 1½ bananas then mix in all of the other ingredients.
2 - Press the mixture into a baking dish, then slice the rest of the banana and decorate the top with the slices and optional toppings like chocolate or nuts before baking.
Flavor Variations
Make the oatmeal just as it is or add mix-ins/toppings of choice. Chocolate or nuts (or both) are my favorite additions. Berries like blueberries and raspberries (fresh or frozen) work well too, as do coconut and dried fruits like dates, raisins, or figs.
Serving Suggestions
Banana Bread Baked Oatmeal is great enjoyed warm or cold just as it is for breakfast or a healthier dessert, but accompaniments that work really well include:
- A drizzle of maple syrup or drippy almond butter, peanut butter, or tahini.
- A dollop of vegan yogurt or coconut cream.
- Fresh berries or fresh banana slices.
- Some dairy-free milk such as cashew milk, soy milk, almond milk, or oat milk, poured over it like you would boxed breakfast cereal.
Storing Leftovers
Let the Banana Bread Baked Oatmeal cool completely then store it in an airtight container in the fridge for up to 5 days or the freezer for up to 3 months. You can reheat the entire dish, or individual portions in the microwave or oven. Time will vary depending on how much you're reheating. For individual portions, I usually cook mine on full power for about 40 seconds.

Banana Bread Baked Oatmeal

Ingredients
- 2 ripe bananas , divided
- 1 teaspoon ground cinnamon
- 1 cup (240 ml) dairy-free milk
- 2 tablespoons maple syrup or sugar
- 2 cups (200 grams) rolled or old fashioned oats
Optional mix-ins or toppings such as
- chocolate chips or chunks
- chopped nuts
- berries
INSTRUCTIONS
- Preheat oven to 350°F (175°C).
- Mash 1½ bananas either in a bowl or in the ovenproof dish that you will be using. Set the remaining ½ a banana aside for now.
- To the mashed bananas add the cinnamon, milk, and maple syrup/sugar. Mix to combine then add the oats. Add any optional mix-ins now too. Stir together really well.
- Spoon into a small oven proof dish, press down well, and smooth out.
- Slice the remaining banana and use it to decorate the top (along with any optional chocolate or nuts).
- Bake for 35 to 40 minutes or until golden brown and heated through.
