You’ll need some simple pantry-friendly ingredients to make this from scratch vegan gravy recipe:

- Stock - Use your favorite. You can use the ready-made stock in a carton or make up your own with stock cubes or bouillon. Obviously the better the stock, the better your gravy will be, so keep that in mind. You can replace half the stock with wine if it's a special occasion and you want extra tasty gravy, or check out my Vegan Red Wine Gravy recipe.
- Soy sauce - For umami meaty flavor. You can use gluten-free soy sauce or tamari instead.
- Flour - Just regular all-purpose flour. Use plain flour in the UK, and if you're gluten-free use gluten-free all purpose flour.
- Onion & garlic powder - For lots of flavor. If you don't have both in your psice collection you can just use one and omit the other.
- Nutritional yeast - For depth and rich umami flavor.
- Thyme - My herb of choice for gravy. You can replace it with dried sage or any other herb that will compliment the dish you are serving the gravy with.
Bear in mind that the color of your gravy will change depending on what stock you use to make it. I used Better Than Bouillon No Chicken for the gravy in the pictures and video so it turned out quite yellow. If you use a "beefy" or mushroom stock it will be browner.

Making Ahead & Storing
Store this simple vegan gravy in an airtight container in the fridge for up to 7 days. It can also be frozen for up to 3 months. Thaw in the fridge overnight when you're ready to use it. Reheat in a small pan on the stovetop or in the microwave before serving. You can thin it a little with a drop of water or stock if necessary.

Quick & Easy Vegan Gravy

- 3 tablespoons all-purpose flour , or gluten-free all-purpose flour
- 3 tablespoons nutritional yeast
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon dried thyme , or sage/rosemary
- 1 tablespoon soy sauce , or gluten-free soy sauce/tamari
- 2 cups (480 ml) stock
INSTRUCTIONS
- To a small pan add the flour, nutritional yeast, onion powder, garlic powder, black pepper, and dried herbs.
- Add the soy sauce, then gradually pour in the stock, stirring or whisking well as you go to work out any lumps.
- Place over medium heat and stir/whisk constantly for about 4 or 5 minutes until thickened and glossy.
