I have a special place in my heart for mashed potatoes and this casserole is quite honestly the best food thing in my life right now. Mounds of creamy buttery mashed potatoes with deliciously tangy cream cheese to cut through the richness, and an oniony, cheesy panko topping that crisps up to golden perfection in the oven. Break through that delicious crust and enjoy every scoopy, delicious bite!
It's like everything you know and love about mashed potato but EXTRA and I'm totally here for it! Even better, if you want to make life a little bit easier when it comes to holiday meals or family dinners this vegan casserole can be assembled up to 3 days ahead. Stash it away in the fridge, ready and waiting for you to bake when needed.

Ingredients
Here is what you need at a glance, along with some important ingredient notes:
- Potatoes - I like to use Yukon Gold potatoes for their gorgeous color, creamy texture, and buttery taste but any all-rounder will do. I do avoid russets for mash though because they are a bit tasteless once boiled and can easily get mushy and watery. If you are in the UK, Desiree and Maris Pipers are best.
- Butter - This makes the mashed potatoes rich, creamy, and flavorful! You can use homemade vegan butter or store-bought.
- Milk - This must be an unsweetened and unflavored variety. We don't want any vanilla getting in here! My milk of choice for mashed potatoes is soy milk. Oat milk and cashew milk also work well.
- Cream cheese - This should ideally be a good quality, fermented one for the tanginess and flavor to come through well in the mashed potatoes. I use Nuts For Cheese Cream Cheese or Spread 'Em Cream Cheese but Miyoko's Cream Cheese works well too. I like to use plain cream cheese but a flavored one like garlic and herb or onion and chive would also be great. Vegan sour cream also works very well as a sub for the cream cheese.
- Shredded cheese - Use your favorite variety. I like to use a mix of mozzarella and cheddar-style cheese but you can use just one type if you prefer. Cheddar will give you a more pronounced cheesy flavor.
- Green onions - Those bites of mild onion are so good in the crispy topping! Some chives or parsley would also be great additions.
- Panko crumbs - Regular breadcrumbs just won't do here. Panko gives the topping so much yummy texture. If you're gluten-free use gluten-free panko crumbs.

1 - Boil the potatoes until tender.
2 - Mix up the cheesy panko topping while you wait.

4 - Spoon into a dish and spread out evenly.

Vegan Mashed Potato Casserole should absolutely be a part of your Thanksgiving and holiday spreads but in case you need some more specific ideas here's what I love it with:
- Vegan meats: Especially my vegan roast, vegan ham, and vegan roast beef.
- Veggies: If you want to cut through the creaminess of this casserole my citrusy Brussels Sprout salad is a very good idea, or there's caramelized Brussels sprouts, red cabbage and apples, and air fryer carrots.
- Other sides: Green bean casserole and lots of gravy! I've got two gravy recipes. For a quick option, there's my easy vegan gravy, and if you want something fancier my vegan red wine gravy is a very good choice!
Oh, and also it might be the Brit in me coming through but you can't beat mashed potato casserole with some vegan sausages and baked beans! 🤤

Vegan Mashed Potato Casserole

Ingredients
- 3½ lb (1.5 kg) potatoes
- 1 tablespoon + 1 teaspoon fine sea salt , divided
- ½ cup (114 grams) vegan cream cheese , I recommend using a cultured/fermented one (or vegan sour cream)
- 1 cup (240 ml) creamy dairy-free milk , and an extra ⅓ cup (80ml) if making ahead & refrigerating
- 6 tablespoons (84 grams) vegan butter , divided
- ½ teaspoon black pepper
- 1½ cups (125 grams) panko crumbs , use gluten-free panko if GF
- 1½ cups (180 grams) vegan cheese shreds , I like a mix of mozzarella & cheddar
- 1 bunch green onions , sliced
INSTRUCTIONS
- Boil the potatoes - Peel and dice the potatoes. Add to a large pan, cover with plenty of water, and add 1 tablespoon of salt. Bring to a boil then reduce heat to simmer rapidly until the potatoes are fork tender (about 15 minutes but this will vary depending on how big the pieces are). Drain immediately, return to the hot pan, and allow to steam dry with the lid off for a few minutes.
- While waiting for the potatoes to cook preheat oven to 400℉ (200℃).
- Make the crispy topping - To a medium bowl add the panko, grated cheese, green onions and 2 tablespoons of melted butter. Stir well to combine and set aside.
- Mash the potatoes - To the potatoes (still in the saucepan) add the remaining one teaspoon of salt, vegan cream cheese, milk (be sure to add the extra milk as per the recipe notes if making ahead and refrigerating), 4 tablespoons of butter, and black pepper. Mash really well until smooth and creamy.
- Assemble - Spoon the mashed potatoes into a baking dish that holds about 2 quarts/liters (I use my 10.5"x7.5" Staub ceramic dish). You can use a 9 x 13 inch but the casserole will be thinner. Top with an even layer of the cheesy panko topping and bake for about 45 minutes or until golden and bubbly.
