If you love sweet potatoes, you are going to LOVE cooking them in the Instant Pot. One pot, 30 minutes (ish depending on size), hands-free, and done. Creamy, velvety soft, super sweet, and honestly, so low maintenance. Your sweet potato life will never be the same!
I've been cooking a batch of Instant Pot sweet potatoes weekly for the longest time because I love having them on hand in the fridge for adding to recipes (I've included some ideas below), and Charlie and Chester love them added to their meals. Not to mention how delicious they are as a side for dinner, or with some vegan butter and cracked black pepper for lunch!

Sweet Potato Size Guide
Here is a quick reference guide for how long to cook your sweet potatoes in the Instant Pot. What's important when determining the cooking time is the width of your potato, not the length.

In most cases, the times here should work perfectly, but you may need to slightly adjust the times to suit your texture preferences or altitude (I am at sea level).
No Tape Measure?
If you find yourself without a tape measure or ruler, a handy hack is to use the distance from the tip of your thumb to the first knuckle. That is about one inch and can be used as a quick and easy way to estimate the width of your sweet potatoes.

Success Tips
- When you cook sweet potatoes in an Instant Pot, be sure to use the trivet. This will keep the potatoes above the water and stop them from becoming waterlogged.
- Use potatoes of roughly the same size so they all cook in about the same time.
- Remember that cooking times vary according to the width of the potatoes, not their overall size.
- Arrange the sweet potatoes in one layer for the best results. If you stack them up, the ones at the bottom will get squashed as they cook and soften.
Ways To Use Cooked Sweet Potatoes
Enjoy your sweet potatoes just as they are with toppings of choice. Some ideas include:
- Sweet Toppings: Vegan butter, cinnamon, brown sugar, vegan honey or maple syrup, marshmallow fluff, chopped pecans or walnuts.
- Savoury Toppings: A dollop of vegan butter and some salt and fresh cracked black pepper, or load them up with shredded vegan cheese, vegan sour cream, vegan bacon crumbles, and chopped green onions.

If you want crispy sweet potatoes, cooking them in an Instant Pot probably isn't the best idea because it's such a moist cooking method. You would be better off just baking them in the oven. However, if you really want to cook them in the Instant Pot, then attempt to crisp them up, you can remove them from the Instant Pot and lay them on a baking tray. Rub or spray with olive oil, sprinkle with sea salt, and either broil until crispy and golden if they are still hot, or if they are no longer hot, bake at 450°F (225°c) for about 15 to 20 minutes until heated through and crisped to your liking.

- sweet potatoes , similar widths, and as many as will fit in a single layer.
- 1 cup (240 ml) water for a 6-quart Instant Pot , 2 cups (480 ml) for an 8-quart Instant Pot
RECOMMENDED EQUIPMENT
INSTRUCTIONS
- Add the water to the bottom of your Instant Pot's inner bowl, then place the trivet in there.
- Clean the sweet potatoes then check their width. Choose the appropriate cook time. 2 inches or less = 15 minutes2 to 3 inches = 30 minutes3 to 4 inches = 60 minutesBigger than that? I recommend cutting them in half lengthways.
- Place the sweet potatoes on the trivet in the Instant Pot. If you had to cut any large ones in half lengthways, place them on the trivet cut side up. Secure the lid and close the vent.
- Select HIGH PRESSURE and MANUAL or PRESSURE COOK depending on your model, and enter the cook time.
- When the Instant Pot beeps to signal the end of cooking time, let the pressure release naturally for 10 minutes, then manually release any remaining pressure. I cover the vent with a clean dish towel to protect my hand.
- The sweet potatoes should be cooked through. In the unlikely event they are not, put the lid back on, close the vent, and set the timer for 5 or 10 minutes more, depending on how uncooked they still are.
