Wonderfully comforting, beautifully sticky Maple Ginger Steamed Pudding. A dream to eat and so easy to make in either a microwave or an oven!

From time to time we all need a warm, comforting, stick to your ribs kind of dessert. It just so happens that my 'time to times' aren't that infrequent at all.....Ok, ok, I'm not going to lie. I love dessert ♡ Dessert is life and if you are reading this then I am sure you are with me on that.
I absolutely adore my Baked Banana Puddings with Boozy Rum Caramel and have made them time and time again. Judging by how well they have done on the blog, I am guessing you guys love them too. And if you love their sticky, caramelly deliciousness, then I am sure that you will also enjoy this new Maple Ginger Steamed Pudding.
Steamed puddings are another traditional British dessert. I have shared my recipes for Vegan Mincemeat, Festive Mincemeat Tart and Mince Pies over the past few weeks and they all follow a traditional British theme. You can take the girl out of Britain but you can't take Britain out of the girl!
A proper steamed pudding isn't particularly difficult to make, but it is a bit of a faff. Making it water-tight by wrapping it up in foil and string is tedious plus they take hours and hours to cook. You run the risk of springing a leak too. There is nothing worse than steaming your pudding for hours only to find the water found its way in and your pudding is a soggy, inedible mess. Trust me, I've been there.
That's where the untraditional method comes in and makes life a whole lot easier. You can steam puddings in the microwave or oven! No big pans of boiling water, no string and no wrapping pudding basins. You can save the wrapping for your Christmas presents instead!
CORNINGWARE HAS THE PERFECT SOLUTION!
Now in order to steam a Maple Ginger Steamed Pudding in the microwave or oven, you need a suitable vessel. If you are using a microwave then a large mug will generally do but you do run the risk of splattering. Splatters are not good and I hate cleaning the microwave! You can't however put a mug in the oven (I don't think anyway..I have never tried but I am guessing they would break). That is where Corningware Meal Mugs come in.
I discovered them recently and they are just perfect for making my Maple Ginger Steamed Pudding.
These handy, very generously sized mugs, are made of durable stoneware and are dishwasher, refrigerator, freezer, microwave & pre-heated oven safe (this ensures even cooking and prevents damage - do not use them in an oven that has not been pre-heated). Their non-porous surface does not absorb food, odours, flavours or stains and they have a really useful vented lid which is BPA free, microwave and top-rack dishwasher safe and which allows steam to escape, keeping your microwave clean and you safe from steam burns.
My husband is the worst for getting splatters all over the microwave as he never bothers to cover anything, but he now has his own Meal Mug and my microwave is remaining clean. Happy days!
He uses his mainly for oatmeal, but I have been using mine for all sorts of things. Mostly for practicing this Maple Ginger Steamed Pudding recipe again and again, but also to make my morning oatmeal, to make overnight oats, to warm soups and stews, to reheat leftovers like chili and to make giant mugs of hot cocoa! I even have a few of my test puddings stashed in the Meal Mugs in the freezer. I don't usually have a problem eating excess puddings, but everyone reaches their limit eventually (I think I must have made about 20 in the end ????) and they will be perfect to reheat when a sweet craving hits over the holidays.
THE GREAT UNVEILING
Dessert heaven, that's what this is ⇧. The combination of soft fluffy sponge, sticky, drippy maple syrup with the chewy heat of crystallized ginger is just delicious. True, unadulterated comfort food. It's not going to win any awards for being super healthy, but use quality ingredients and it's still miles better for you than a standard steamed treacle pudding with processed golden syrup, butter and eggs etc.
This Maple Ginger Steamed Pudding can be ready and on your plate, topped with a dollop of ice-cream, custard or cream in less than 4 minutes. How good is that? If you prefer the oven method then you will need to be a little more patient and wait around 30 to 35 minutes. Both cooking methods yield great results. The microwave version is softer and more puddingy, whereas the oven version is more cakey. I wouldn't say no to either!
WARM COMFORTING MAPLE GINGER STEAMED PUDDING IN A FEW EASY STEPS
- Pour some maple syrup and a little of the crystallized ginger into the bottom of the Corningware Meal Mug.
- Put the dry ingredients into a bowl, add the wet ingredients and ginger.
- Stir, pour on top of the syrup, cover then microwave/bake.
- Seeve with some vegan ice cream or custard!

Easy Maple Ginger Steamed Pudding
Author:Ingredients
- 3 tablespoons maple syrup
- 3 tablespoons crystallized / candied ginger , finely chopped , (can be omitted if you do not like ginger)
- 8 tablespoons all purpose flour (I recommend using an unbleached additive free variety)
- ¼ teaspoon salt
- 3 tablespoons sugar
- ½ teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 tablespoon aquafaba (liquid from a can of chickpeas)
- 2 tablespoons coconut oil (measured in liquid form) - plus a little extra for greasing the container
- 6 tablespoons plant-based milk
INSTRUCTIONS
- If using an oven preheat to 350°F
- Grease a Corningware Meal Mug (or any other microwave safe container with a capacity of about 600mls) thoroughly with a little coconut oil (see recipe notes for alternative container suggestions)
- Pour the maple syrup into the bottom of the mug then sprinkle over a little of the chopped ginger (around 1 tablespoon)
- In a small bowl mix the flour, salt, sugar and baking powder together then sprinkle over the remaining chopped ginger
- In a small jug mix the vanilla extract, aquafaba, liquid coconut oil and milk together
- Pour the liquid ingredients into the dry ingredients and stir until just combined (so you can't see any dry flour). Do not over mix.
- Gently spoon the batter over the maple syrup. Start at the edges and try to make a seal all the way around so that the maple syrup is trapped, then slowly work your way into the middle. Don't worry if a bit of maple syrup escapes. The pudding will still work.
- If cooking in the oven tightly cover with a square of tin foil
- If using the microwave secure the Meal Mug lid into place and remove the coloured steam vent cover. If using a different container cover with a small plate.
- To oven cook place in the pre-heated oven and cook for 30 - 35 minutes or until a tooth pick inserted comes out clean.
- To microwave cook on full power for 1 minute 30 seconds. Have a quick look and check it appears cooked then put the lid back on, cover the steam vent and leave to rest for 2 minutes. (my microwave is 1200w. If yours is different then the cooking time will need to be adjusted slightly, a few seconds more or less)
- To turn out cover with a plate and gently turn over, being careful not to spill hot syrup on yourself. It should slide out easily but if it doesn't just turn it back up the right way and run a knife around the edge then try again.

Could I use a flax "egg" instead of the aquafaba. Like another poster, I cook my chick peas from dried ones. Thanks.S

FLax egg doesn't give nearly as tender a result in cake-y things as aquafaba does. You can save your chickpea water and reduce it down in a pan until thick like canned chickpea liquid then cool it. You can use it just the same then. It freezes well so when you make a batch of chickpeas you can put it in small pots for when you need it. Hope that helps!

Do you think it would work well enough to use almond flour in this recipe?

The recipe would need changing quite a bit to make it work. Almond flour would probably just crumble to pieces on its own. It would likely need some tapioca starch added to get it to hold together. You'd probably also need to change the amount of liquid too as almond flour isn't so absorbent. WHatever you need to make a thick batter. If you wanted to experiment though, even if it doesn't work out perfectly I'm sure it will taste nice!

Will these work cooked in a steamer too? I used to make great batches of individual steamed sponge puddings, using eggs, in my electric steamer. But since I've been vegan I haven't managed to produced great results. I've tried using yoghurt, or flax eggs, or tofu, or apple puree as my egg substitute and they always sink and are a bit heavy. I've not thought of trying aquafaba in puddings, but have had great results with my vegan meringues! My boyfriend and my poor long suffering Dad have had to endure lots of experiments!

I think this would work really well in a steamer although I haven't tried it myself. I'm not sure on timing and haven't steamed many puddings for a long time, except my vegan Christmas pud, so you would need to use your judgement there. Let me know how it turns out!

Is this recipe for one 20 oz vessel or two? I cannot tell from the instructions. Also have you doubled the recipe with any success? My husband will flip over this so I want to get it right.

The recipe makes one pudding in a 600ml (around 20oz) vessel and it will serve 2 people or one very hungry husband! If you have a big enough microwave safe container, like a pudding bowl or pyrex dish then you could easily double it. You will have to play around with the timing though because with microwaves if you double a recipe you don't always need to double the time. It's better to slightly undercook it and put it back in for 20 seconds than it is to overcook so be on the cautious side. I hope he enjoys it!

I just made this recipe and it was good. I did substitute the aquafaba with 1 more tablespoon of coconut oil and I made it without ginger. I drizzled it with more maple syrup and some cream before I ate it. It was yummy!

Mel, this looks really interesting. But we usually cook our chickpeas from dry stock. We have not explored the whole aquafaba scene - will the liquid from cooking be the same as the liquid from the cans?

Hey Greg, The liquid from cooking your own chickpeas is a little thinner than that from a tin. If you reduce it until it's a bit thicker and gloopier like the tinned kind it works just the same though. Just put some in a small pan and simmer it without a lid until it gets to a similar consistency, almost like egg white.
