The quickest and easiest summer dessert for one! This Vegan Peach Crumble is brought to you thanks to a random peach languishing in the fruit bowl and a strong dessert craving while all alone.
What started as a microwave mug crumble recipe evolved with further testing, into a single-serve peach or nectarine crumble that can be made in a microwave, air fryer, or oven.
Choose the microwave option and you can be tucking into it in as little as 5 minutes, but even if you go for the longer oven route you're only talking about 20 minutes from start to finish.
So ridiculously quick. So easy. And SO good! I think you can probably come up with a really good reason to make yourself one right now. Add a dollop of ice cream or a drizzle of warm vegan custard and you'll be in dessert heaven!

Ingredients
Here is what you need at a glance, along with some important ingredient notes & substitution ideas:
- Peach - A nice ripe one. Or a nectarine. Frozen slices work too and maybe canned although I haven't tried it. This recipe also works really well with fresh or frozen berries.
- Flour - You can use all-purpose flour or gluten-free all-purpose baking flour too.
- Sugar - I recommend using white, cane, or turbinado sugar here for the best grainy, crunchy, sugary crumble topping. Brown sugar, coconut sugar, or artificial sweeteners won't work the same way.
- Vegan butter - Harder varieties are easier to rub into the flour, but softer ones will work too. You'll just get messier fingers.
- Baking powder - This makes the topping a touch lighter so if you have some I recommend using it. However, if you don't have any you can safely omit it.
- Cinnamon - It doesn't make the crumble obviously cinnamon. It just adds some depth of flavor. You could use a bit of pumpkin spice instead or omit it.
- Salt - Important for flavor in sweet recipes so don't skip it.
You will also need a dish or mug (depending on your cooking method) that has a volume of at least 10oz/300ml (1⅓ cups).
Let's Make Vegan Peach Crumble!

1 - Cut the peach or nectarine in half, remove the stone, then slice.
2 - Make the crumble topping by mixing the dry ingredients, then rubbing the butter in with the tips of your fingers until it looks something like this:
3 - Place the peach slices in an individual-size dish suitable for your preferred cooking method, i.e. it should be oven-safe if baking in the oven or microwave-safe if microwaving. If using a microwave a mug works fine. I used a small oven-proof soup bowl.
4 - Sprinkle over the crumble topping then cook in your microwave, oven, or air fryer.
5 - Leave to settle for a couple of minutes before digging in.

Vegan Peach Crumble For One

Ingredients
- 1 ripe peach , or nectarine (frozen slices work too)
- 3 tablespoons all purpose flour , plain flour in the UK (or GF all-purpose baking flour)
- 3 tablespoons white or cane sugar
- 1 tablespoon vegan butter
- ⅛ teaspoon baking powder
- 1 pinch fine sea salt
- 1 big pinch cinnamon
INSTRUCTIONS
- Cut the peach in half and remove the stone. Slice then place the slices in the bottom of a mug, ramekin, or other individual-sized dish with a volume of at least 10oz/300ml (1⅓ cups). Be sure to use one suitable for your preferred cooking method, i.e. it should be oven-safe if baking in the oven or microwave-safe if microwaving.
- Add all of the other ingredients to a small bowl. Use the tips of your fingers to combine and rub the butter into the flour until it looks like coarse bread crumbs (see my photograph in the post above or watch my video). Sprinkle the crumble topping over the peaches.
- Microwave for 1 minute 40 seconds, air fry at 350°F for 10 to 12 minutes, or oven-bake at 400°F for 15 minutes. If using frozen peaches add an extra 10 seconds in the microwave, an extra 3 minutes in the oven or an extra 2 minutes in an air fryer.

It would. It definitely won't be as tasty but good for a year-round more budget-friendly option. Make sure to drain them well if you try it.
