This. This Emergency Strawberry Cheesecake Bowl is what happens. A creamy, tart, jammy, sweet, buttery one-person situation made with only a handful of ingredients, that's good for breakfast, dessert, or snack, and ready in minutes!
It’s a LAZY dessert/snack with approximately zero percent effort but it's SO GOOD! Perfect for when you fancy a slice of real vegan cheesecake but don't have the time, energy, or inclination to make one!

Ingredients
Here is what you need at a glance, along with some important ingredient notes & substitution ideas:
- Dairy-free yogurt - Either plain, coconut, or vanilla. I like plain and unsweetened because the tartness is lovely with the sweetness of the strawberry jam and strawberries. It's really good with my homemade vegan yogurt!
- Strawberries - Fresh and ripe. You could use any other berry with its matching jam though!
- Strawberry jam - I always have a jar of Bonne Maman in my fridge!
- Cookies - Use either vegan graham crackers or digestive biscuits. Storebought or homemade. Shortbread-style cookies or Biscoff cookies would work well too. Many store-bought cookies are accidentally vegan.
- Vegan butter - This gets melted and stirred through the cookie crumbs to make them rich, buttery, and delicious like the crust on a cheesecake.
Cookie Crumb Tip
I like to crush a whole packet of cookies at once and store them in a jar in the pantry. It makes it very easy to spoon out a few tablespoons whenever you need an Emergency Strawberry Cheesecake Bowl or Cheat's Banoffee Pie Bowl.
I mean it's already a super quick recipe but having them crushed, ready, and waiting makes it even more convenient!

Emergency Strawberry Cheesecake Bowl

Ingredients
- 3 big dollops dairy-free yogurt , I like the tartness of natural yogurt but coconut or vanilla work too.
- 1 big dessert spoonful strawberry jam
- 1 to 2 big handfuls chopped strawberries
- 2 graham crackers , or digestive biscuits
- 2 teaspoons vegan butter , melted
INSTRUCTIONS
- Spoon the yogurt into a small bowl.
- Top with strawberry jam and fresh strawberries.
- Crush the cookies. I break them up, put them in a mug and use the end of my rolling pin to squash them into crumbs.
- Stir the melted butter into the cookies, sprinkle all over your bowl, then dig in!

Hahaha! Love it. "Emergency "Strawberry Cheesecake. Perfect. We all have those types of "emergencies"!!! I really like the way you write. It feels honest and relatable. I totally "get" it. Every recipe of yours I've tried has been delicious and your instructions and explanations as to "the why" are easy to follow. I often read them and think "hmm. I wonder if I could use this instead of that" ( because I may not have that item in my pantry) and then I read on and sure enough you say "and don't think to use that instead of THIS! " HAHAHA! Happens a lot to me!
