Current lunch obsession - Giant peanut butter sriracha sandwiches!
Bear with me on this one. Peanut butter and sriracha might at first sound like a strange sandwich filling combination, but the savoury, spicy, peanutty combo works so well together, especially with the cool and crunchy cucumber and lettuce, which balances out the rich spiciness very nicely.
This is more of a method than a recipe. I'm not giving quantities because it totally depends on how big your bread slices are. My only stipulation is to be generous with everything. Thick, hefty slices of good quality bread, lots of peanut butter, an indecent amount of sriracha, LOADs of cucumber (the texture with the creamy peanut butter is just divine!), lots of lettuce, a good dose of onion, and loads of salt and pepper.
Then go sink your teeth into your hefty, spicy, nutty, saucy masterpiece and thank me later!

Ingredients
Here are your peanut butter sriracha sandwich essentials:

- Bread - Any will do, although I think that whole wheat bread really complements the fillings. The bread in the pictures is my easy whole wheat bread.
- Peanut butter - This should be natural and definitely unsweetened. Crunchy or smooth. You choose. I haven't yet tried it, but I think almond butter would work really well here, too.
- Sriracha - Gochujang also works extremely well.
- Cucumber - A must for its crunch and coolness against the spicy sriracha. I'd go as far as to say that if you don't have a cucumber, you shouldn't make this sandwich. It's an essential component.
- Lettuce - Any variety. I used butter lettuce because it's what I had in the fridge. Romaine or iceberg would be good too.
- Onion - Either red onion or green onion. A sweet white onion would probably be ok too.

You can toast the bread before making the sandwich if you want to. I didn't because I baked my bread fresh on the morning of photographing this, and there's nothing better than freshly baked, soft bread!

Peanut Butter Sriracha Sandwich

Ingredients
- 2 thick slices bread
- lots of natural peanut butter , don't use sweetened!
- lots of sriracha or gochujang
- lots of sliced cucumber
- a few lettuce leaves
- a little red or green onion , very thinly sliced
- a sprinkle of sea salt
- lots of freshly ground black pepper
INSTRUCTIONS
- Spread the bread generously with peanut butter, then drizzle over lots of sriracha.
- Top one side with lots and lots of sliced cucumber. I like to season the sandwich with salt and pepper now because it sticks nicely to the wet cucumber.
- Add a few lettuce leaves and some onion, then top with the other slice of bread and cut the sandwich into two.
- Stuff your face.
