Snickerdoodle Mug Cake. Brought to you by those sudden urges for a cakey-type treat that you always get when you have no cakey-type treats in the house, and inspired by my Vegan Snickerdoodles and Snickerdoodle Hummus.
I'm no stranger to mug cakes. My Cinnamon Roll in a Mug is one of the most popular recipes on AVV. But we all need a bit of variety in our lives, and this no-egg mug cake with all the flavours of a snickerdoodle cookie can be mixed up and cooked in minutes.
I love this piping hot from the microwave with a big dollop of dairy-free vanilla ice cream!

Snickerdoodle Mug Cake

Ingredients
For the mug cake
- 2 tablespoons nut or seed butter , or a neutral liquid oil (see recipe notes)
- ¾ teaspoon vanilla extract
- 4 tablespoons dairy-free milk , (use 3 tablespoons if using oil instead of nut butter)
- 3 tablespoons (38 grams) sugar
- 6 tablespoons (54 grams) all purpose flour , (plain flour in the UK). Or spelt flour, oat flour, or GF baking flour
- ¼ teaspoon baking soda , bicarbonate of soda in the UK
- 1 small pinch fine sea salt
- ½ teaspoon ground cinnamon
Cinnamon sugar for sprinkling
- 1 teaspoon sugar
- 1 big pinch ground cinnamon
INSTRUCTIONS
- In a roughly 12oz or 350ml size mug, add the nut butter or oil, vanilla extract, milk, and sugar. Stir until combined and smooth. You might need to squish the nut butter about a bit with the back of the spoon to break it down.
- Add the flour, baking soda, salt, and cinnamon and stir until combined, making sure to reach right down into the bottom of the mug as you stir.
- Put in the microwave uncovered. I recommend sitting the mug on a small plate the first time you make it in just in case you get the mug size a bit wrong and it overflows.
- The first time you cook it there will be a little trial and error because all microwaves are different. I suggest cooking it on full power for 1 minute then check it and cook in 5-second increments after that until done. My microwave is 1200w and takes 1 minute 5 seconds. You will know when it is ready because it will have puffed up in the mug, almost to the top. The top of the cake will be slightly damp (because it's microwaved), but if you give it a little poke with a fork you should see fluffy sponge underneath.
- Sprinkle generously with the cinnamon and sugar before eating immediately.

I may have over cooked. But really dry and gritty (I used tahini) the taste is good but not cake-y enough for me

A quick and healthy fix for a sweet tooth like me! Used oat flour (slightly less than 1/2 cup), with no adjustments to the other ingredients and it turned out great!! Don't forget to sprinkle a generous amount of sugar and cinnamon on top :) Thank you for this!

Very good. This turned out great. Next time i'll probably whip up a small amount of vanilla cinnamon icing to throw on there too. But that's just me and it was really good without any icing.
