Oh, we've been loving this Sticky Crumbled Tempeh lately! It's sweet, savoury, garlicky, a little spicy, soft, chewy, caramelized, and all-round delicious.
This easy weeknight and meal-prep-friendly tempeh recipe takes just 15 minutes and makes such a tasty addition to meals. It's so good I've found myself eating it from the pan every time I've made it, and that's from someone who hasn't always been the biggest tempeh fan.

- Quick & easy to make. Done in only 15 minutes.
- Flavour-packed. Sweet, savoury, and slightly spicy with loads of flavour in every bite.

- Meal prep friendly. Leftovers reheat beautifully. I often make double, so I've got some for another meal later in the week.

Ingredients
Here is what you need at a glance, along with some important ingredient notes & substitution ideas:

- Tempeh - Pack sizes vary slightly across brands. It doesn't have to be exact. Just use 1 pack.
- Vegetable stock - Use your favourite. I usually make mine with a couple of teaspoons of Better Than Bouillon and hot water.
- Garlic - The recipe calls for 2 large cloves, but I say go with your heart here!
- Sesame oil - I recommend using toasted sesame oil for its intense, rich, nutty flavour.
- Sriracha - This adds a pleasant amount of heat to the tempeh. If you're a spice wimp (🤭) or cooking for the kiddos, you can use the same amount of tomato ketchup instead.
- Brown sugar - Dark brown for the best, rich, caramel-like flavour. Light brown sugar is still delicious though if it's all you've got.
- Soy sauce - Or tamari, gluten-free soy sauce, or reduced sodium soy sauce.
- Black pepper - For peppery, pungent warmth.
- Lime juice - The zip of fruity, citrusy, acidic lime juice brightens and balances the rich, savoury, and sweet flavours. You can use a tablespoon of rice wine vinegar instead to replace the acidity, but lime is superior flavour-wise.
- Oil - Essential to avoid sticking. Any will do, such as olive oil, avocado oil, vegetable oil, sunflower oil, or canola oil.
How To Make Sticky Crumbled Tempeh

- Crumble the tempeh with your fingers.

- Mix up the sauce.

- Simmer the tempeh crumbles in vegetable stock until the liquid is absorbed/evaporated. This process reduces the bitterness.

- Add a little oil and fry the tempeh until golden (to impart a nutty flavour).

- Add the sauce and cook for a few minutes, until the tempeh becomes sticky, caramelized, and a bit crusty in places. That's it. You're done!

Serving Suggestions
This vegan tempeh recipe is really versatile. Some ways we've enjoyed it include:
- Over coconut basmati rice with cool thinly sliced cucumber, shredded green onions, sesame seeds, creamy vegan sriracha sauce and some kimchi if I have some.
- Over plain rice with steamed broccoli or sautéed greens and a drizzle of chili oil (usually Abokichi Okazu Chili Miso Oil - my fave!), chili crisp, or whatever sauce I've got open in the fridge.
- Tucked inside lettuce wraps.
- On creamy vegetable soups like vegan potato soup, vegan leek & potato soup, or sweet potato soup for a protein boost and a lovely texture/flavour contrast.
- In tacos, burritos and sandwiches.
- With salads, bowl meals or stir-fries.
- With my quick and easy vegan noodles and veggies.
- On Brothy Rice Bowls in place of the caramelized vegan "beef".
- Scattered over my Carrot Noodle Soup instead of the shredded tofu.

Sticky Crumbled Tempeh

Ingredients
- 1 package tempeh; pack sizes vary, but anything from 200 to 250 grams is fine
- ¾ cup (180 ml) vegetable stock
- 2 tablespoons (30 ml) soy sauce; use GF soy sauce or Tamari if necessary
- 1 tablespoon (15 ml) toasted sesame oil
- 2 packed tablespoons (25 grams) dark brown sugar, or coconut sugar or maple syrup
- 1 to 2 teaspoons (5 to 10ml) sriracha
- Juice of 1 lime, or 1 tablespoon (15ml) rice wine vinegar
- 2 large cloves garlic, minced very finely
- ⅛ teaspoon freshly ground black pepper
- 1 tablespoon (15 ml) oil, for frying
INSTRUCTIONS
- Crumble the tempeh with your fingers into a large non-stick skillet/frying pan. Spread out into a thin layer, then pour in the vegetable stock. Place over medium heat and bring to a boil. Adjust the heat to keep the stock at a fairly vigorous simmer and cook until the liquid is fully absorbed/evaporated. About 5 minutes.
- Meanwhile, mix the soy sauce, sesame oil, brown sugar, sriracha, lime juice, garlic, and black pepper together in a small bowl. Set aside.
- Add the oil to the tempeh and stir to coat. Turn the heat to medium and fry, moving frequently, for about 5 minutes or until lightly golden.
- Pour the sauce mixture into the tempeh. Cook, stirring occasionally, until it thickens, coats the crumbles, and gets sticky and caramelized. This usually takes about 5 minutes but varies a little depending on the type of pan you use.
