I love this apple oatmeal for breakfast! It's so soothing and cozy and is a great way to use up a lonely, lacklustre apple in the fruit bowl.
My trick for making this quickly with no chopping is to get out your box grater and grate the apple straight into the saucepan. It's a surprisingly quick task because apples grate really easily. You can have it all assembled and on the stove in less than 2 minutes.
Grating the apple means it melts nicely into the oatmeal during the relatively short cooking time, so the texture is nice and creamy, and the flavour and sweetness are well distributed throughout the oats.
I really love to serve my steaming bowl of apple oatmeal with a scattering of walnuts or pecans, or blueberries (or both!), and a generous sprinkle of brown sugar. A drizzle of maple syrup and a melty knob of vegan butter make a simple and really yummy topping, too!

Ingredients
Here is what you need at a glance, along with some important ingredient notes & substitution ideas:

- Apple - You can use any variety of apple. Whatever's in the fruit bowl!
- Oatmeal - I like to use rolled or old-fashioned oats. You could also use steel-cut oats, but they will take longer to cook.
- Liquid - I always use water to make my oatmeal, but you can use dairy-free milk if you prefer, or half water and half milk.
- Sugar - Brown sugar pairs really well with the apple, but you can use any other kind of sugar or even maple syrup if you don't have any.
- Spices - Cinnamon, vanilla, and salt for great flavour. I sometimes add half a teaspoon of ground ginger too. I recommend adding the vanilla once the oatmeal is cooked and removed from the heat to preserve its flavour.
Extra Plant Protein Tip! 💪
Easily add an extra 12 grams of plant protein to this recipe by making your oatmeal with soy milk. You can add a further 4 grams by stirring in a tablespoon of nut or seed butter while cooking.

Apple Oatmeal

- 1 medium apple
- ½ cup (50 grams) rolled or old-fashioned oats
- 1½ cups (360 ml) water , or dairy-free milk
- 1 tablespoon brown sugar
- ½ teaspoon ground cinnamon , or ginger (or both)
- 1 pinch fine sea salt
- ½ teaspoon vanilla extract
INSTRUCTIONS
- Using a box grater, grate the apple into a small saucepan. Don't peel it.
- Add everything else (except the vanilla) to the pan and place over medium-low heat. Cook until thick and creamy. Stir frequently.
- Add the vanilla and stir it in once the oatmeal has been removed from the heat to preserve the flavour.
- Serve with toppings of choice such as a sprinkle of brown sugar or a drizzle of maple syrup, walnuts, pecans, nut or seed butter, blueberries or blackberries.
