Vegan Brown Sugar Frosting! A twist on regular vegan buttercream that's rich with brown sugar flavour and caramel undertones.
This delicious frosting works incredibly well on all sorts of cakes, cupcakes, cookies, and cinnamon rolls. I used it on my Vegan Pumpkin Cake, but it's also wonderful on my Vegan Banana Cake, Vegan Carrot Cake, and Hummingbird Cake.

Ingredients
Here is what you need at a glance, along with some important ingredient notes:

- Powdered sugar. Also known as icing or confectioner’s sugar. Make sure to sift it to avoid lumpy frosting.
- Brown sugar - I like to use dark brown sugar for maximum flavour, but you could use light brown sugar if you want a more subtle brown sugar flavour. It's important to make sure your brown sugar is fresh. I recommend using a brand-new, unopened bag so it's soft and moist. Brown sugar has a tendency to get a little hard and clumpy once opened.
- Vegan butter - I recommend using a hard vegan butter when making frosting. I usually use Earth Balance in the tub. Softer margarine-style vegan butters will create a softer, sloppier frosting, which will ooze out between cake layers and won't pipe well.
- Vanilla - For the very best flavour, use vanilla extract, not vanilla essence. \
- Salt - A good quality fine sea salt or kosher salt. I don't recommend using table salt.
Need Extra-Defined, Stiff Frosting?
For an extra stiff frosting, add a tablespoon or two of cornstarch or arrowroot to the frosting. This is especially useful when you need very well-defined shapes for decorating.

Add a teaspoon of dairy-free milk and mix again. Continue to add more milk, a teaspoon at a time, until the frosting is the consistency you like.
Overwhipping frosting can make it thin because the temperature rises and melts the butter. Try refrigerating for an hour. Give it a quick whip and check the consistency again. If it's still too thin, add more powdered half a cup at a time, until it reaches your desired thickness. You can also add a tablespoon or two of cornstarch or arrowroot.
If the frosting is a little grainy immediately after mixing, don't worry. The sugar crystals will continue to dissolve as the frosting sits (even when slathered on your baked goods. Next time, if you don't want to have to wait for it to dissolve, you can blend your brown sugar in a blender until superfine like powdered sugar before making the recipe.

Vegan Brown Sugar Frosting

Ingredients
- 1 cup (220 grams) vegan butter
- ½ packed cup (100 grams) dark brown sugar
- ¼ teaspoon fine sea salt
- 3 to 4 cups (375 to 500 grams) powdered sugar , add more for a thicker frosting
- 1 teaspoon vanilla extract
INSTRUCTIONS
- With an electric hand mixer beat the butter with the brown sugar and salt until soft, light, and fluffy. Then let it sit for 5 minutes. This gives the grains of sugar time to dissolve into the butter.
- Add the powdered sugar gradually, beating between additions. With the last addition, add the vanilla and continue beating until fluffy and well combined. Adjust the amount of powdered sugar to create the thickness you need for whatever you are using the frosting for. For instance, if you are frosting a 9 x 13-inch cake, you can use the lower amount of powdered sugar, but if you are piping frosting on cupcakes, you will need to use the higher amount to make it thicker.
