By far the quickest and easiest way to cook fresh beetroot, while still preserving and enhancing the flavour, is in an Instant Pot.
Instant Pot beets are so quick, so easy, and just like Instant Pot sweet potatoes, they come out perfectly tender and extremely sweet. Perfect for salads, snacks, or adding to your favourite recipes!
Don't waste the beet greens! They are delicious and can be used raw in salads, smoothies, or pesto, or sauteed, steamed or stir-fried. They are delicious used in my noodly Chard Stir Fry!

Success Tips
- When you cook beetroot in an Instant Pot, be sure to use the trivet. This will keep them above the water and stop them from becoming waterlogged.
- Use beets of roughly the same size so they all cook in about the same time, or cut them into evenly sized pieces.
- Arrange the beets in one layer for the best results. If you stack them up, the ones at the bottom will get squashed as they cook and soften.

Here is a quick reference guide for how long to cook your sweet potatoes in the Instant Pot.

In most cases, the times here should work perfectly, but you may need to slightly adjust them to suit your texture preferences or altitude (I am at sea level).

Instant Pot Beets

- 5 to 6 beets
- 1 cup (240 ml) water
RECOMMENDED EQUIPMENT
INSTRUCTIONS
- You can peel the beets before you cook them, or leave the peel on and rub it off once they are cooked.
- Place the beets, (either whole or cut into chunky pieces) onto the trivet in the bottom of your Instant Pot. You can cook as many as will comfortably fit on the trivet. I don't recommend piling them up too much, as they may get squashed.
- In a 6-quart Instant Pot, pour in one cup (240ml) of water. If your Instant Pot is a different size, see the recipe notes.
- Secure the lid and close the vent. Select HIGH PRESSURE and MANUAL or PRESSURE COOK depending on your model, and enter the cook time.1½ inch - 15 minutes, 2 inch - 20 minutes, 2½ inch - 30 minutes, 3 inch - 40 minutes.
- When the Instant Pot beeps to signal the end of cooking time, carefully release the pressure. I cover the vent with a clean dish towel to protect my hand.
- The beets should be cooked through. In the unlikely event they are not, put the lid back on, close the vent, and set the timer for another couple of minutes.
