A super easy, fragrant and summery Ginger Peach Smoothie to start your day. Just blend peaches, banana, ginger and plant milk and you're done. See my tips for prepping ahead to make it even quicker for busy mornings!
PREP TIME: 5minutes
TOTAL TIME: 5minutes
Servings: 1large 750ml smoothie
2ripe juicy peaches, (You can use frozen peaches but if you do use a fresh banana and not a frozen one)
1mediumfrozen banana(fresh or frozen)
¾ cup (180 mls)non-dairy milk
1tablespoonmaple syrup(optional - add to taste or not at all)
1 approx2½ inches longstick fresh ginger, roughly x ½inch wide
Remove the pits from the peaches and add them along with the other ingredients to a blender. I recommend starting with only half of the fresh ginger or ¼ teaspoon of ground ginger.
Blend until smooth then give it a taste. Add a little more ginger if you want a stronger flavour.
Making in advanceOnce blended it's best to drink this smoothie immediately. It doesn't store well. However, you can prep the ingredients in advance to make it even quicker and easier to make in the mornings. To do this simply pack your pitted and sliced peaches, banana and ginger into individual bags and freeze them. When you’re ready to blend, add the plant milk and blend it up. I do recommend adding a little more milk though as everything is frozen. If you don't your blender will have a hard time and your smoothie will be too thick. Go for ¼ of a cup (60 ml) extra to start and add more as needed to get things blending smoothly.
