This is what I call a Cheat's Banoffee Pie Bowl. It's a 5 minute easy, stripped-down shortcut recipe for when you want banoffee pie but, let's be real here, there's no way you're going to take the time and energy to make one on a weekday.
3big dollopsdairy-free yogurt, I like the tartness of natural yogurt but coconut or vanilla work too.
1small banana, sliced
a few bigdrizzlesvegan honey or maple syrup, golden syrup, date caramel, or any other caramel.
INSTRUCTIONS
Crush the cookies. I break them up into chunks, put them in a bowl or mug, and use the end of my rolling pin to squash them into crumbs. You could also put them in a sandwich bag, seal it, then bash them up.
Stir the melted butter into the cookies.
Spoon the yogurt into a small serving bowl. Top with sliced banana, a generous drizzle of vegan honey/caramel, and the buttery cookie crumbles. Dig in!
NOTES
I use the word "recipe" loosely here as this is more of a guide, so use more or less of anything. I say go with your heart when it comes to banana, buttery crumbles, & sticky drizzles!
