VEGAN IRISH STEW

This one-pot, hearty vegan Irish stew can be made on the stove, in an Instant Pot, or in a slow cooker.

It has a rich, deep flavour and is loaded with chunky, sweet, tender vegetables and optional vegan "meat" or mushrooms.

Gather your ingredients:

– oil , or use water for oil-free – optional beefless tips or portobello mushrooms – onion – carrots – celery – garlic – flour or cornstarch – Guinness or any other dark stout – rutabaga/ swede or turnips – potatoes  – green cabbage  – vegetable stock – soy sauce , or Tamari – salt & pepper – a touch of white or cane sugar – bay leaf, thyme & rosemary

and a visual:

first:

sear the optional vegan "meat' or mushrooms

then:

sauté the onions, carrots, celery & garlic

then:

add the flour & beer

and:

then everything else

simmer until cooked then add back the "meat"/mushrooms

then:

serve
