It can be served with rice, baked potatoes, crusty bread, corn bread or pasta and leftovers reheat really well and often taste even better than they did on the day of creation. You can serve those leftovers as they are, or recycle them in spicy lasagnes, tacos, burritos, pies, enchiladas, nachos or as a base for a delicious soup. The possibilities are endless.

In case you notice and wonder why, I have called them ‘vegetarian’ recipes rather than vegan on Parade’s site. I have found that posts mentioning the V word, sadly don’t appear to do so well there. The recipes are all vegan though, and hopefully sharing them there will encourage their readers to appreciate meatless meals a little more.
